I finally found someone to do a Whole 30 with me! My friend Becca said she'd do one with me on a whim and now I wonder if she's regretting it. We both kept complaining about a variety of health problems and carrying around extra weight since having our kids, however, nothing we tried was helping us feel better or lose those extra 10-20 pounds.
So we are embarking on a Whole 30. No dairy, no sugar, no grains, no legumes, no wine....so nothing but meat, veggies, fruits and some oils and nuts. It sounds drastic and it is, but we are persevering while eating a crapload of veggies!
In week 1 the hardest thing for me to give up is a bedtime snack that is all sorts of sugar! I love making chocolate mug cakes, eating chocolate chips or any sweet that I baked during the week. Becca loves putting sweet stuff in her coffee first thing in the morning.
I am going by the idea to put a veggie at every meal and using fruit with almond or cashew butter for a snack. I also made some homemade jam that is frozen berries with no sugar added and chia seeds. It resembles raspberry jam with seeds. I also roast tons of potatoes and onions to have on hand for breakfast/lunch. I just finished up a batch of cauliflower fried rice that I had at breakfast with eggs or lunch/dinner as a side dish. Now I have moved onto spaghetti squash pad thai that I turned into a Whole 30 recipe. It is delish!
My kids have tried all of the crazy things I am eating and Matthew is surviving eating healthier. We have been out to eat and I always get a side salad and some sort of protein. It is amazing how many things have sugar in them! I have read so many labels and nutrition facts, but Becca and I decided we are not going to beat ourselves up. This is our first Whole 30 and we want to enjoy it, not grow to hate it.
