I LOVE to cook...and bake...and eat! But, when you work 8 hour days plus have to attend night meetings for work and Matt's taking class, cooking begins to be a big time consumer. So, I have tried to start making meals ahead of time and freezing them. That way we can just pull them out of the freezer, stick them in the oven and have a tasty meal in an hour.
On previous ventures, I made tater tot casserole, my mom's veggie/beef casserole, chicken stir fry, tortilla pie and a few others. This past weekend I made turkey/hamburger lasagna, and then I created my own "casserole creation" of chicken, leftover lasagna noodles, cream of onion soup and cheese...oh and my staple is black beans (got to get fiber where you can...gosh I sound 80!). Matt is a good sport and will try my experiments. Usually, he is honest if he doesn't like it.
Tonight we are having lasagna then many nights of leftovers, because we both are working/busy 3 nights this week.

OK, I want your recipe for tater tot casserole.
Amy and I make stuff in our slow cooker that serves like 8 people, then we divvy it up into servings for 2 and freeze it. Tonight I'm defrosting some "Peachy Pork Chops" and all I have to make is the rice and a vegetable side.
But seriously. Tater tot casserole please!
