I am really missing my camera. This summer it fell out of my purse in Okoboji and the little lever that holds the battery in place broke off. For a short while, my cute little Nikon continued to work and then one day it just stopped. No more photos until I get it sent in for repairs, so in the meantime please use your imagination. :-)
Last night, Matt and I had our parent's over for dinner to try out some new recipes. We also got the holidays figured out and this year we will be celebrating with Matt's side of the family for Thanksgiving and with my side for Easter then we will flip flop for the next set of holidays. Christmas works out well, because Matt's family opens presents on Christmas Eve and mine does on Christmas Day.
But, going back to last night, I got some recipes off of www.ourbestbites.com and they turned out delish!
Crockpot Vegetable Stew

1 1/2-2 lb. lean stew beef, cut into even smaller bite-sized pieces (just pull out a pair of kitchen shears and cut anything that looks like you'd need to use a knife and fork on)
4-5 medium red potatoes, chopped
4-5 medium carrots, peeled and chopped
4 stalks celery, chopped (optional)
2 onions, chopped
4-5 cloves garlic, minced
2 12-oz. cans or 3 c. vegetable juice cocktail (like V8 or even Bloody Mary mix)
1 10-oz. can condensed tomato soup
10 oz. water (just use the can from the tomato soup to measure)
1 tsp. basil (optional)
2 beef bouillon cubes (or 2 tsp. beef base)
1/2 tsp. freshly ground black pepper
Just chop everything up and pour the liquids into the crockpot. Cook on low for 9-10 hours or high 5-6 hours. Matt would not let me use any of his good red wine, so I cut the vegetable juice in half and added 12 oz. of beer.
Homemade Biscuits

2 c. flour
1 t. baking powder
Mix together and cut in 1/3 c. shortening. Add a dash of salt and 1 c. milk. Mix thoroughly, but be careful not to over mix. Drop by teaspoonful onto cookie sheet and bake 12 minute at 450 degrees.
Honey Butter

1 stick real butter (no margarine) (softened, but not melted)
1/4 c. honey
3/4 c. powdered sugar
Whip together with hand mixer and let stand before serving. Really good on homemade biscuits!
Semi-homemade Apple Cake

1 box yellow or spice cake mix (mix as directed on box)
Add 2 apples, chopped; walnuts; lots of cinnamon.
Bake at 350 for amout of time listed on box cake mix. (I did mine in a bundt pan for 40 minutes.)
Once cooled, mix 1 c. powdered sugar and 2 T. milk to make glaze. Drizzle over top of cake.
Enjoy your dinner!!!

I'll definitely try these recipes out. You still have to let me know what you think of the Peachy Pork Chops though.
As for the digital camera, that really sucks. Before you get it fixed, make sure that it won't cost you more than just getting a newer model. Or, you could ask Santa for one. :)
