I love to bake

My kitchen has been very busy this past week. I started my holiday baking and have accomplished:
1. Coconut Snowballs
2. Frosted sugar cookies
3. Dipped pretzel rods
4. Christmas balls (supposed to be green wreaths, but I was out of red hots)
5. Caramel fritos
6. Applesauce M&M cookies
7. Peanut butter fudge

To Do:
1. Spice drop cookies
2. Brownies
3. Banana bread
4. And a few others I think of at the last minute.

Last night Sara D. and David helped me make the fudge, caramel fritos and Christmas balls. They were very helpful and we got a lot done! Then Sara D. helped me make Tostada Pie that Matt and I will eat tonight for dinner. It's super easy! Here is the recipe:

1 lb. hamburger (browned with onion)
1 small can tomato sauce
1 small can green chiles

After hamburger is browned, add tomato sauce and chiles. Set aside.
In a deep dish pie pan, spread out crescent rolls or some kind of canned pizza or pie crust in the pan. Spread a layer of refried beans (usually about 1 cup) then pour mixture over top. (You can make this ahead of time and refrigerate or freeze.)

When ready to bake, preheat over to 375. Bake for 20-25 minutes. Then top with cheese (any kind, shredded) and bake for 5 more minutes, until cheese is melted. It is such a rich tasting meal, because of the refried beans and I sometimes add peppers, olives or other veggies to the meat mixture.

That's a lot of baking! I usually only make about 4 or 5 things. Thanks for the recipe. We love to try new things. It gets boring eating the same stuff all the time.
