This weekend Matthew and I went to dinner at the new Carlos O'Kelly's in town with our friends Nick and Sara Deanda (they are the couple who set us up two years ago). It was a lot of fun then on Sunday we went to their house to see "Fred Claus" and ordered Hunan Palace. On Monday we ate our leftovers from the two places, so I decided to try a new recipe from my Fix It and Forget It crockpot cookbook. This is one I call Yum Yum Chicken Sarah style. :-) It was tender, smelled delish and has lots of nutrients from the ninja fruit (cranberries).
3-4 chicken breasts
1 can whole berry cranberries
1 c. bbq sauce
chopped onion
chopped celery (optional)
Throw this into the crockpot and cook for 6-8 hours on low. Your kitchen will smell great and it's super easy. We paired it with leftover mashed potatoes and peas. Yum yum!
Also, if you want a super easy recipe here is my tater tot casserole recipe.
1 lb. browned hamburger
chopped onion
1 can cream of chicken or mushroom soup
1 can cheddar cheese soup
frozen green beans or mixed veggies (optional)
tater tots
Combine hamburger, onion, soups and veggies. Pour into sprayed 9x13 pan. Layer tater tots on top and cheese if you like it. Bake at 350 degrees for 1 hour. (This is a great casserole to make ahead of time and freeze.)
