A few weeks ago I put together a post about how I plan to revamp my meal planning to save time and money. So far, it appears to be working well. I came up with15 meals and created a shopping list based on the 15 meals. I went shopping on Jan. 6th and spent $117. The only other money I spent was $5 at HyVee for spinach and $15 at Trader Joe's for peanut butter, quinoa, beer, and hummus.
Here are the meals we have made thus far and we still do not need to go to the grocery store.
1. Pork chops with onion/cranberry sauce, quinoa
2. Pork roast with cabbage/onions
3. Pepperoni/green pepper/pineapple pizza-homemade
4. Tator tot casserole, cauliflower, biscuits (I made two casseroles so I have one more in the freezer)
5. Mom's casserole, cauliflower, bread
6. Chili, cinnamon rolls
We have eaten leftovers from these to make more meals and a few were eaten out. So far, I think the only things I will need to replenish at the store in the next week are fresh products like: apples, milk, bananas, oranges, frozen veggies, beans, yogurt, spinach, lettuce, sweet potatoes.
The remaining meals I have to fix are:
7. Chicken noodle soup
8. Steak and mashed potatoes
9. Pancakes
10. Chicken Fried Steak
11. Meatloaf
12. Potato Soup
13. Spaghetti with homemade sauce
14. Tacos--chicken, beef or steak
For lunchs I have been eating more vegetarian. My favorite is a chopped up/cooked sweet potato, green beans, and a few Bush's vegetarian baked beans plus crackers with hummus. I also do a lot of green monster smoothies for breakfast or lunch. And, when in doubt I keep cans of no-salt-added green beans on hand to get some veggies with each of my meals.
My main goal is to eat a veggie and fruit at every meal and to eat less processed foods.

Is there a Trader Joe's in Sioux City now?! I LOOOOVE Trader Joe's. The one by us is as close to my house as the Burger King is to your house (pretty close).
