New recipe for Red Beans and Rice!

I love reading Iowa Girl Eats' blog, because she always has great recipes. This week I had everything on hand (minus the beans and rice that I ran to HyVee for) and I love crockpot recipes, because dinner is ready when you get home.  I made a few changes to the recipe that may be seen below.

Crock Pot Red Beans & Rice

http://iowagirleats.com/2012/02/21/not-so-fat-tuesday-lighter-red-beans-rice-crock-pot-recipe/
Serves 6
Barely adapted from MyRecipes.com

Ingredients:
1 green bell pepper, chopped
1 medium onion, chopped
3 celery stalks, chopped
3 garlic cloves, minced
14oz andouille kielbasa sausage, sliced
3 tablespoons Creole Mrs. Dash-garlic powder-taco seasoning mixture
1lb dried red kidney white Great Northern beans
7 cups water
white brown rice

Directions:
Place first 8 ingredients into a 4-quart crock pot and cook on high for 7.5 hours. Remove the lid partway for the last 30 minutes to allow the sauce to thicken slightly. Serve over cooked white rice.

It was sooo good! I served ours over brown rice instead of Iowa Girl Eats' white rice, but it still tasted delish!  This made a huge portion....I think we have enough for 8 more servings, so I might freeze half of it this time and make a smaller batch next time.
