Yummy Beer Bread Recipe

In the winter, I love bread and thanks to my good friend Nellie I have an awesome recipe (that's super easy) for beer bread. It's quite simple, first measure 3 c. self rising flour (or if you don't have that, use 3 c. flour, 1 1/2 t. baking powder, 1 1/2 t. salt) and 3 T. sugar.

Next add in 12 oz. of warm beer. My husband loves his expensive wheat beers and stouts, so I had to walk to the gas station and purchase a nice Keystone Light. I find the cheaper the beer the better the bread. (And, funnily enough, the cashier did not card me until after I purchased my beer. Then she freaked out like I might be a sting operation. I told her that I've been able to purchase beer for almost 8 years, so I am good and legal.)

The mixture will get all bubbly, but just take a fork and stir it together gently. Do not overstir. Pour the mixture into a loaf pan that is well greased. If you want to add a little seasoning on top that's great. I used Mrs. Dash Original seasoning.

Bake at 375 for 50-60 minutes.

Unfortunately I forgot to take a picture of my finished product, but it was delish! We ate it warm out of the oven with butter and jam. It was a great combination for my newest chili recipe: Pumpkin Chili! Thanks for Foodie Fresh's blog (http://foodiefresh.com/)

Pumpkin Chili

1 onion, chopped
1 green bell pepper, chopped
1 lb. turkey...or any meat of choice (I used hot and spicy brauts)
1 16 oz. can beans
1 15 oz. can pumpkin
1 large can diced tomatoes
2 T. chili powder

Saute onions, peppers and meat in olive oil. Add beans, pumpkin, tomatoes and chili powder. Simmer on medium for 20 minutes.

This makes a VERY thick chili, which is how I like it, but you can add water or tomato juice if you like it soupy. The pumpkin is not even noticable and adds great nutrients!

I love beer bread too, but my MIL's recipe that I use calls for much more sugar (3/4 cup) and a good bit of butter too. I made it once with whole wheat flour and guiness, which was pretty good too. So glad you liked the pumpkin chili. We loved it too!
