Thoughts on a Tuesday

1) I LOVE smoothies in a bowl for breakfast. For years I have read Healthy Food Blogs with SIAB, but never tried it until this week. They are soooo delish! Here's my easy recipe and I will be posting pictures later this week.

1 c. plain Greek yogurt
1 frozen banana (important that the banana is frozen so the smoothie is thick and frothy)
1 c. frozen fruit (I've used blackberries or strawberries so far)
1/2 c. milk
1 T. honey
1-2 Large handful spinach or leafy greens
1 T. Chia seeds
coconut
chocolate chips

Blend the yogurt, banana, frozen fruit, milk and honey. Then blend in the spinach (you won't even taste this and it gives you a serving of veggies hidden in fruit). Top with chia seeds, coconut and chocolate chips. Yum! This smoothie can keep me full until lunchtime and Matt even likes them!

2) I love being outside. Last night I went with the Wilson's to play at Whittier School. It was such a nice night and my "personal trainer" 4-year old Reed gave me quite a workout. Who knew running up and down all the lines on the playground would be so hard? Then I decided to jog home to enjoy the peaceful weather even more. I was so excited I could jog 3 miles with only walking one block!

3) I LOVE reading! Tonight is book club and we read "The Paris Wife." I am already excited to start reading our new book for July's meeting.

4) Long weekends are so fun to look forward to. We plan to take a picnic to the dam and see lots of friends.

5) Bows and I enjoy having coffee (or iced tea and water) on the patio at Starbucks. Yesterday was just the perfect afternoon to people watch and chat with mom and Miss Lauri.
